This is what happens when you are in the mood for candy and cookies.....a new cookie is born! It's kind of crazy that I was even in the mood to bake after cranking out 12 lasagnas for my husband's school. I guess the power of chocolate and peanut butter is a strong force that I can't even resist! Here is the recipe and may the peanut butter cup force be with you! (A laugh for my husband!)
Recipe
For the Cookie:
1 box devils food cake mix
2 eggs
1/2 cup oil
2/3 cup mini chocolate chips
For the Peanut Butter filling:
1/4 cup butter
1 cup creamy peanut butter
1 tsp vanilla
1 cup powdered sugar
1 jar milk chocolate frosting
Mix the eggs and oil together in a bowl. Add your cake mix and combine. Stir in the chocolate chips last. I used a small melon baller to scoop out my cookies. Place them on an ungreased cookie sheet and bake at 350 degrees for 9 mins. Once your cookies are baked, let them cool. While they are cooling, get a saucepan and melt the butter and peanut butter together on med heat. Once completely melted, add your vanilla and remove from heat. Stir in the powdered sugar. Take a half a teaspoon of this mixture and place it on top of each cookie. I pushed it down gently to spread it out some. Last, top each cookie with some chocolate frosting.
