My oldest daughter's favorite candy bar is a twix. I was looking through some recipes on pinterest recently and found a twix cookie recipe. I started thinking about some of the other dessert bars I have made in the past and before I knew it, I had constructed this twix bar in my head. I used the shortbread cookie dough recipe from the twix cookie but I used a caramel filling from an oatmeal chocolate bar recipe and a fudge topping from my smores bar recipe. I have to say that this collaboration of dessert bars really works! The shortbread recipe is really not sweet but is the perfect layer to hold the salted caramel and fudgy layers. This recipe might just have to go into my snow day treats!
Shortbread dough:
1 1/2 cups butter, softened
1 cup powdered sugar
1 tsp vanilla
3 cups all purpose flour
1/2 tsp salt
Mix the butter and powdered sugar together until creamy. Next add the vanilla and mix. Last add your flour and salt and mix until just combined. Spread into a greased 9x13 baking dish. Press the cookie dough down to form an even layer and bake at 350 degrees for 20-25 mins.
Caramel Layer:
1 bag of soft caramels (I used the werthers brand)
1/4 cup of milk
sea salt
Let these ingredients melt together on med low heat in a sauce pan. Once the shortbread layer is cool, add the caramel on top. I would not start the caramel step until the shortbread is cooled! Once caramel is spread on top of shortbread, sprinkle with a light layer of sea salt. Let the caramel sit about 30 mins to set up!
Fudge Layer:
1 bag of chocolate chips (can be semi sweet or milk)
1 can sweetened condensed milk
Melt these two ingredients together on med low until melted and smooth. Work quickly to spread this layer on top of the caramel. Once the fudge layer is cooled, you can enjoy!
